  1. Cook noodles in a large pot of boiling water until done. Drain.
  2. Meanwhile, combine chicken stock, ginger, soy sauce, peanut butter, honey, chilli paste and garlic in a small saucepan. Cook over medium heat until peanut butter melts and is heated through. Add noodles, and toss to coat. Garnish with spring onions and peanuts.

Tip:

If you don't have chilli paste, use minced red chilli to taste.

Used different ingredients.I was so happy to find this recipe! Its nearly identical to one which was served in a restraunt where I used to work. The dish was called Thai Chicken. To recreate it I addded shredded chicken breast, julienned carrots and cabbage. Really tasty either way!-21 Jul 2008

LOVED this recipe! I boiled mangetout, carrot, courgette and beansprouts with the noodles, and also added a few tablespoons of coconut milk to the sauce. Had no chilli paste, so used just chilli sauce from a jar. Delish, will definitely be a favourite!-19 Sep 2011

Big Red Peanut Noodles

Spicy, aromatic and filling – this dish has got the lot. The red from the chilli, the purple from the red cabbage and the green from the herbs all look great together and taste amazing. When you throw the creamy, salty, spicy peanut sauce into the mix, you get a bowl of noodles that you wish would never end. Method:

  • Start by chopping the aubergine into 1.5cm cubes. Add to a hot frying pan with a pinch of salt. Dry-fry for 5–7 minutes, until charred and collapsing, tossing regularly.
  • Now prepare the other ingredients. Finely slice the red cabbage. Remove the coriander stalks and roughly chop them, then chop the leaves of the herbs and the peanuts. Cut the lime in half, and slice the chilli, if using.
  • Put the noodles in a bowl and pour over boiling water to cover. Leave to soak, according to the packet instructions, until tender.
  • Return to the aubergine mixture. Add the coriander stalks and cabbage to the pan along with the oil, and cook for 2–3 minutes, until the cabbage has softened.
  • Drain and rinse the noodles under cold running water, then set aside.
  • Now make the sauce. Halve the lime and squeeze the juice into a bowl. Add all of the other sauce ingredients and whisk together. Season with salt and pepper.
  • Return to the pan. Peel the garlic, then grate the garlic and ginger directly into the pan. Cook, stirring, for one minute, then add the noodles, dressing and most of the herbs to the pan, along with a splash of water. Cook for one minute, tossing well so everything is covered in the dressing.
  • To serve, split the mixture between two bowls. Top with the remaining herbs, chopped peanuts and sliced red chilli. Serve with the lime halves for squeezing over.

When I need to rustle up a quick meal out of nothing, I often turn to my stash of dried noodles and Chinese seasonings. A simple bowl of noodles, stirred into excitement by a spicy Sichuanese sauce, finished with a little fresh spring onion greens and some fragrant seeds or nuts, is extremely satisfying and takes less than half an hour to make.

This particular recipe is inspired by similar noodle dishes I've tasted in Chengdu, the capital of Sichuan, although I've used peanut butter instead of the more typical sesame paste. If I happen to have a cucumber or a crisp lettuce in the fridge, I might make a little salad to serve on the side.

I try to keep a supply of Clearspring dried udon and buckwheat noodles in my larder, but you can use any kind of dried Chinese or Japanese noodle for this recipe. If you don't have Chinkiang vinegar, use a marginally smaller amount of red wine vinegar instead: just enough to sharpen up the rich, nutty sauce.

light soy sauce 2 tbsp
dark soy sauce 1 tsp
Chinkiang vinegar 1 tbsp
chilli oil 2-6 tbsp, to taste
sesame oil 2 tsp
garlic finely chopped 4 tsp
stock or water 3-4 tbsp
dried udon noodles 500g

To finish
white sesame seeds 2 tsp
finely sliced spring onion greens 4 tbsp

Toast the sesame seeds in a dry wok or frying pan, over a gentle heat, until golden. Set aside.

In a bowl, use a spoon to mash the peanut butter with the soy sauces and vinegar until evenly mixed. Stir in the chilli and sesame oils and the garlic, with enough stock or water to give the sauce the consistency of single cream.
Cook the noodles according to the instructions on the packet. Drain well and divide among the serving bowls. Sprinkle each serving of noodles
with the spring onion greens and toasted sesame seeds. Ask your guests to mix everything together well
before eating.

This recipe uses a whole lime, peel and all, which brings amazing zing, backed up by a double hit of ginger and coriander. I like these noodles with tofu, but any quickly sauteed vegetables or toasted peanuts or cashews would do. I use chive flowers to add colour, but some normal chopped chives will do just as well.

For the sauce
1 unwaxed lime
4 spring onions, roughly chopped
A large thumb of ginger, roughly chopped
A small bunch of coriander, washed
1 tsp honey
1 tbsp soy sauce, plus 1 tsp
2 tbsp rapeseed oil
300g extra-firm tofu
300g dried soba noodles
A handful of radishes, cut into matchsticks
100g mixed seeds (eg black and white sesame, sunflower and pumpkin)
A small bunch of chives, finely chopped (or garlic chives/chive flowers)
2 tbsp pickled sushi ginger

Bring a large pot of salted water to a boil. Meanwhile, make the sauce: first chop the lime, peel included, into rough, small pieces and put into a small blender. Add the spring onions, ginger, coriander (stalks and all), honey, soy and oil and blitz to a thin, bright-green paste.

Drain the tofu, pat it dry, and cut it into matchsticks or 1cm cubes. Heat a little oil in a frying pan and fry the tofu, along with a pinch or two of salt, over a medium-high heat for a few minutes, until browned on one side. Add a tiny splash more oil if needed, to prevent sticking. Toss gently once or twice, then continue cooking for another minute or so, until the tofu is firm and golden. Add the remaining teaspoon of soy, take the pan off the heat, toss the tofu in the oil and soy, then transfer it to another bowl.

Boil the soba noodles according to the packet instructions. Meanwhile, fill and boil the kettle. Once the noodles are cooked, drain in a sieve, then quickly rinse them with the boiling water from the kettle to stop them sticking. Put the noodles back into the pan, add the lime and green ginger paste, and toss to coat.

Pile the noodles into a bowl and top with the tofu, radish, seeds, chives and pickled ginger. These noodles are also great eaten cold.

"I first ate this in Australia in the early nineties and the taste has stayed with me for life. The version I had did not have the noodles in it, but was a simple shredded salad. If you are like me, veg and chicken will not fill you up until dinner time so noodles have been added.

I wanted to avoid refined flours and sugar in this book so I found some wholewheat noodles in the supermarket and although it is crossing cuisines a little, I also cooked this with gluten-free Japanese soba noodles made from buckwheat, which was really good too. If, after searching the aisles, you cannot find either, then regular egg or rice noodles will also work."

Step-by-step

  1. Put the chicken breasts in a medium pan and cover with cold water. Add the garlic, ginger, bay leaf and chilli, cover with a lid and bring the water to the boil. Then turn down the heat and simmer for 10–12 minutes or until the chicken is cooked all the way through and piping hot.
  2. Meanwhile, place the dressing ingredients in a large bowl, add salt and pepper and set aside.
  3. Once the chicken is cooked remove it from the liquid and set it aside to cool down a little. Fish out and discard the garlic, ginger, bay leaf and chilli with a slotted spoon. Add 5 tablespoons of the cooking liquid to the dressing in the bowl and whisk everything together until combined.
  4. Top the water up in the pan so there is enough to cook the noodles in. Return to a high heat and bring to the boil. Cook the noodles according to the packet instructions.
  5. Once cool enough to handle, slice the chicken into 1cm pieces or shred it using a fork. Add to the dressing along with the carrot, spring onion and cucumber.
  6. Once cooked, drain the noodles well and rinse them under cold running water to help cool them down a little. Add them to the salad also and toss everything together until evenly coated in the dressing.
  7. Divide amongst serving bowls, top with the ripped up coriander or basil leaves, if liked, and serve.

Chilli Crisp Garlic Butter Spaghetti

STEP 1
Heat a large pot of salted water over high heat. When boiling rapidly, add the pasta and cook until al dente.

STEP 2
In the meantime, in a wok or large frying pan over high heat, add the butter and wait until it starts to get foamy. Add the garlic and stir until just softened and fragrant (don’t let it colour) . Then add the chilli crisp oil, peanut butter, soy sauce and oyster sauce. Stir and simmer for 2 minutes or until the sauce is well combined and thickened slightly. Take off the heat until the pasta is cooked.

STEP 3
When the pasta is al dente, reserve ¼ cup of the pasta cooking liquid. Place the spicy butter sauce back on a high heat and add the pasta straight into the pan with the sauce . Pour over the reserved pasta water. Use tongs to stir and toss the pasta in the sauce for 2-3 minutes or until the sauce is thick and glossy. Add the spring onion and sesame seeds and toss until well combined. Divide among serving plates. Sprinkle with coriander , if using , and drizzle with extra chilli crisp oil.

Made this a while ago and couldn’t remember where I wrote the recipe, Yes, I sometimes still use a pen and paper, remember pre historic items, well I use them and sometimes it’s not a great idea because I misplace them and I was so upset because this is such a flavoursome recipe certainly holds a punch.
