Deliciously healthy chicken recipes

Not only is chicken a great source of protein, it’s also high in the mineral phosphorus which we need to keep our bones and teeth strong and healthy. It’s incredibly versatile, too: great with pasta, in stir-fries, soups or curries, or simply grilled with a lovely, seasonal salad.

When it comes to buying chicken, if it’s within your means, buy higher-welfare and sustainable options. The minimum standard we would recommend is RSPCA Assured – start here and upgrade to free-range or organic whenever you can. Be adventurous, try something different and whip up one of these easy, healthy recipes for dinner this evening.

Jazz up this popular combo of pasta and pesto with grilled chicken breasts and green beans. Bashing the chicken between sheets of greaseproof paper until lovely and thin, then quick-frying it with your favourite flavours is an incredibly easy and super-speedy way to get delicious, tender results. Try this technique, then tweak with your own favourite herbs or spices, and serve simply with seasonal greens and potatoes for a tasty, quick dinner.

This dish requires minimal effort but really delivers on the flavour front – it’s simply a case of throwing all the ingredients into a tray, then whacking it in the oven to roast while you get on with your evening chores. To serve, put the whole tray in the middle of the table for everyone to take their share. Delicious with brown rice or crusty bread for mopping up the juices.

Skewers of tender chicken and crunchy garlic bread, served with a salad of sliced oranges, spinach and a crumbling of feta, this is a vibrant dish of contrasts. When cooking, weigh your kebabs down in the pan so they get beautifully crispy.

Sweet and mild, this simple dish is a great way to introduce kids to curry and get some hidden veg into them, too. Tweak the spice levels depending on your tastes and use top-quality mango chutney for added flavour.

This Indian-inspired roast chicken makes the perfect weeknight dinner for one. Roasted in one dish, it’s an incredible mishmash of flavour and quick to knock together, too. Serve with a side salad to up your veg intake.

Healthy Chicken Soup

*organic ingredients recommended*

  • 1 yellow onion, diced
  • 1 cup of carrots, chopped or shredded (I used pre-shredded carrots for convenience)
  • 1 cup of celery, chopped
  • 4 tbsp. olive oil (or ghee)
  • 32 oz. chicken broth or chicken bone broth
  • 1 cup whole mushrooms, sliced
  • 2 lbs. organic chicken thighs (I used 2, 1 lb. packages, each had 4 thighs)
  • 4 bay leaves
  • 3 tbsp. Caribbean jerk seasoning (buy this in the spice aisle at your local (or favorite online) grocery store)
  • Salt and Pepper to taste

  • Prep the veggies.
  • Then sauté the onions, carrots, and celery in a stock pot with the olive oil (or ghee) over medium heat until they begin to soften.
  • Once tender, add the broth and mushrooms.
  • Cook until the broth boils.
  • Once boiling, reduce the heat to low and add the chicken and bay leaves. Season with salt and pepper to taste.
  • Cover and simmer for about 20 minutes or until the chicken is cooked through and fork tender.
  • Remove the thighs one by one, onto a cutting board and shred with a fork.
  • Once shredded, transfer the meat back into the pot.
  • At this point, it’s ready to serve. I always make a bowl. I also always add some hot sauce to mine… because I’m addicted to hot sauce.

I like to serve this soup along with a salad or brown rice to make it a complete meal if I’m cooking for other people, too. The brown rice adds more fiber, is more filling, and helps stretch the dollar more.

Make the brown rice on the side to keep your soup low carb!

I like to ladle the soup over the top of a bed of brown rice if my family or significant other are involved. You could also do brown rice noodle or other clean, plant-based noodles, too. I never have though.

This keeps your soup lower calorie and but lets your family enjoy the meal, without feeling like they’re restricted, too.

How to produce a moist, tender chicken meatloaf

Ground chicken has almost no fat, which makes the meatloaf diet-friendly but also tends to make your final product somewhat dry. Choose whether to add a little healthy fat for moisture and flavor.

If you do, we recommend that you use olive oil or other healthy oil with a pleasant flavor. One or two tablespoons mixed in with the chicken and seasonings will make a difference.

We have included a recipe that includes breadcrumbs and milk, for the same reason: to add moisture. You may use broth, alternative milk, or water instead. Grated cheese added to any loaf also adds moisture, but on the other hand, calories, too.

How long to bake chicken meatloaf

It’s important that your meatloaf reach an internal temperature of 165°F. degrees. Without a meat thermometer, press the center of the loaf after baking for 45-50 minutes. A fully cooked chicken meatloaf will be firm to the touch.

Cover leftovers tightly with foil or plastic wrap. Refrigerate up to 3 days.

To freeze raw: Wrap the raw loaf in foil, then put it in a freezer bag. Freeze up to 6 months. Thaw in the refrigerator overnight before baking.
To freeze cooked: Cool the loaf. Wrap it well in foil, then put it in a ziploc bag. Freeze for up to 3 months. Thaw in the refrigerator overnight.
To reheat the cooked loaf

Have the oven at 300°F. Put 2-3 tablespoons of broth or water in a shallow pan and place the thawed loaf on top. Cover the pan tightly. Heat the loaf for 20-30 minutes.

Crescent Roll Chicken Bundles

Courtesy of Lil Luna

Warm chicken hand pies don't need to be a big kitchen ordeal if you use canned chicken and store-bought crescent roll dough. Any opportunity to make the canned chicken juicy by combining it with a sauce or some sort of a creamy base will make the protein live up to its true potential, and in this recipe, it's combined with cream cheese and canned cream of chicken soup for maximum flavor.
