Preparation of pork tenderloin with mushrooms and cream:

We cut the onion and the julienne mushrooms, the garlic into rounds, and the meat into suitable pieces. In a suitable pan put 3-4 tablespoons of olive oil in which we fry the meat for about 10-15 minutes until it browns well, during which time we turn it over.After frying, remove the meat on a plate with a napkin to absorb the excess oil.Put the onion and mushrooms in the remaining hot oil and leave them to harden until soft.Add the cream and let them boil. Then add the pieces of meat, mustard, parmesan, butter, garlic, season with salt, pepper and a little thyme. Let them boil together for about 10 minutes, until the preparation begins to take on a slightly yellowish color.When serving, add green parsley and, preferably, a little orange juice, which in my opinion fits the taste very well.

Ancuta, if you mean the dumpling machine, you can go to Selgos to buy it. I asked some friends from Italy to send me one and after it came into my possession, I was surprised to see the same device at Selgros and a little cheaper than the one in Italy.

simona, on the other hand we like polenta, but we rarely eat pork, not that we wouldn't like it but it's quite heavy, so we prefer even newer chicken (and this is just me) and beef. you can make a puree next to it

At 200 gr of spinach, add 200 gr of flour, 1-2 eggs, salt, pepper, nutmeg and water so that a dough comes out, neither thick nor flowing.

It seems a bit complicated recipe, but it is not.

The stew is excellent. Luckily I bought sweet pepper paste in Romania (exactly the same) and I kept looking for some recipes to use it all and the right time came for this stew. I served it with polenta and it was very much appreciated by my Norwegian friend who likes all our Romanian food.

Ce cantitati de legume ,carne si apa pot folosi la prepararea unei ciorbe a 40 de portii?

    600-800 de grame de cotlet de porc, dezosat si degresat feliat in 8 felii

Method of preparation

1. Carnea feliata se bate pe ambele parti cu ciocanul pentru snitele, se sareaza si pipereaza.

Daca aveti niste felii de cotlet de porc cu os, frumoase, groase de 3-4 cm, aruncati un ochi la reteta de cotlet de porc la tigaie.

2. Se curata atent ciupercile si se taie in jumatati sau sferturi, in functie de marime. Se curata usturoiul si se taie cateii in sferturi. Se pune uleiul intr-o tigaie (cratita) incapatoare cat e inca rece, se adauga si usturoiul si se pune pe foc. Se rumeneste usturoiul, dupa care se scoate si se arunca.

3. Se infaineaza bine feliile de carne pregatite pentru escalop de porc cu ciuperci si se prajesc la foc mediu in uleiul aromatizat cu usturoi, pana se rumenesc usor pe ambele parti. Pe masura ce sunt rumenite, se scot si se pastreaza acoperite, la cald.

4. Odata toate feliile de carne rumenite, se scurge si se arunca grasimea ramasa in cratita, fara sa se spele, insa, pentru ca tot gustul bun e in acele particule care au ramas lipite de aceasta. Se pun feliile de carne inapoi in cratita si se adauga ciupercile curatate, taiate in sferturi sau jumatati (dupa marime):

5. Se toarna supa sau apa fierbinte, doar cat sa acopere carnea. Nu e nevoie de mult lichid, acest escalop de porc cu ciuperci e totusi un fel principal, nu o ciorba.

6. Escalopul de porc se sareaza si pipereaza (cu masura, tinand cont ca mancarea trebuie sa scada), se da focul la mic si se acopera cu un capac. In aproximativ 20 de minute sosul va fi scazut, ciupercile facute si carnea moale. Dupa preferinta, se poate adauga in acest moment o lingura de smantana, pasta de rosii sau pasta de ardei. Eu am adaugat-o pe cea din urma. Indiferent de ce alegeti sa adaugati, mancarea se mai da intr-un clocot scurt si este gata.


Acest preparat se potriveste foarte bine cu cartofi piure (aceasta a fost garnitura pe care am folosit-o eu) dar si cu orez sau chiar o garnitura de paste.

Tocana cu Ficat de Porc si Ciuperci

Spalam si taiem bucati ficatul de porc, il pune m in tigaie cu uleiul si il prajim la foc mare pina cind isi schimba culoarea si incepe sa se rumeneasca. Scoatem ficatul din tigaie si adaugam ceapa taiata solzisori, adaugam sare si vinul si lasam sa se inabuse si sa se inmoaie cit mai mult ceapa.

Numai cind e transparenta si foarte moale e gata. Intre timp daca mai este nevoie ca s anu se arda mai adaugam cu lingura putina apa. Cind ceapa e gata varsam in cratita/ tigaie ciupercile curatate si taiate in functie de dimensiunea lor daca sunt mici le lasam intregi, daca sunt mai mari le taiem in jumatati.

Aduagam sosul de rosii si mai lasam 5-10 minute, apoi adaugam ficatul si foile de dafin si lasam sa fiarba pina cind ficatul e gata (cind daca il intepam cu furculita nu iese zeama singerie).
Servim cu mamaliga.

Vinul poate fi inlocuit de un pahar cu 2/3 apa si 1/3 otet de vin (de calitate).

Ruladă de porc cu ciuperci

1. Carnea se spală, se lasă la scurs, apoi se taie pe lungime, astfel încât să se obţină o felie de carne care să se poată rula. Se bate puţin cu ciocanul de şniţele, apoi se condimentează şi se lasă deoparte. Se bat ouăle, se adaugă caşcavalul ras, apoi se sărează, se piperează şi se prăjeşte în puţin ulei, la fel ca o omletă. Separat, ciupercile se amestecă cu usturoiul şi se călesc în puţin ulei la foc mic. Heat the oven.

2. Pe felia de carne se aşază uniform feliile de şuncă afumată, omleta şi ciupercile, apoi se rulează şi se leagă cu o sfoară în spirală. Se aşază într-o tavă cu puţin ulei. Se presară sare, piper, rozmarin, se unge cu ulei şi se stropeşte cu vin alb.

3. Se bagă la cuptor şi se coace aproximativ o oră, iar înainte de a fi gata se taie sfoara şi se scoate. Se taie felii şi se serveşte caldă, ornată cu ciuperci şi pătrunjel verde.

Tăiem costiţele potrivit, pentru prăjit în tigaie, înlăturăm dacă este cazul, pe cât se poate, surplusul de grăsime. Ulei se foloseşte puţin, 3-4 linguri iar dacă costiţele sunt mai grase (cum au fost costiţele mele) se poate folosi şi mai puţin ulei. Încingem uleiul şi punem costiţele să se rumenească uşor, 2-3 minute, după care punem o cană cu apă călduţă, căpăcim tigaia şi lăsăm pe foc încet, 45-60 minute până se evaporă apa şi costiţele s-au frăgezit bine. Dacă nu le puţeţi aprecia din ochi, încercaţi costiţele cu o furculiţă sau gustaţi, să fie carnea fragedă. Puteţi freca costiţele cu piper, sare, coriandru sau orice alt condiment vă place, înainte de ale pune în tigaie caz în care recomand să le lăsaţi să se odihnească o oră. Eu procedez aşa când prepar costiţa pe grătar şi mai rar când o prăjesc la tigaie.

Eu am vrut să am un gust curat de costiţă prăjită la tigaie, condimentată la sfărşit cu puţin piper proaspăt şi sare. Vă amintiţi gustul cărnii de porc prăjită imediat după sacrificarea porcului, aceea pomană a porcului cu gustul ei inconfundabil, pregătită ţărăneşte fără condimente, pe care ţăranul nu se prea înghesuia să le folosească abuziv. De asemenea gust am intenţionat să mă apropii cu aceste costite de porc.

După ce s-a evaporat apa şi am rumenit costiţele, eliberăm tigaia de costiţe dar fără să aruncăm sosul, prăjeala rămasă. Ciupercile le ştergem bine de eventualele resturi de compost, cu un prosop curat. Le punem în tigaie, în sosul încins, rămas în urma costiţelor. Este păcat să pierdem gustul şi aromele rămase în tigaie după prăjirea costiţelor. Punem bucăţica de unt să îmbogăţim sosul şi călim ciupercile pâna îşi pierd apa şi se rumenesc. Ciupercile trebuie să se pătrundă pentru a fi uşor digerabile (ciupercile mai crude sunt greu digerabile).

Când ciupercile sunt gata, le răsturnăm cu tot cu sos într-un bol, presărăm un praf sare şi unul piper. Am tocat mărarul şi l-am pus peste ciuperci, amestecându-le. Dacă preferaţi altă verdeaţă, puteţi aroma ciupercile cu ce doriţi sau puteţi renunţa la verdeaţă.

Preparăm o mămăligă, nu gutuie, ci mai moale, intermediară, o răsturnăm fierbinte într-o strachină mare şi punem peste ea costiţele şi ciupercile cu sos. Untul din sos va aroma mămăliga şi te poate face să-ţi lingi degetele. Cine ştie? Că eu am terminat costiţele de mult şi m-am întors la dragoste cu forţa- biscuiţii populari.
