  1. Place the thinly sliced cucumber onto kitchen paper and pat the extra moisture away. This will prevent the bread from becoming soggy should you be serving the sandwiches later in the day.
  2. Butter the bread thinly all the way to the crust; this in addition to pat drying the cucumbers will help to keep any moisture away from the bread.
  3. Arrange a single layer of cucumbers on the buttered slice, then top with a second buttered slice. Press down lightly on the sandwich and cut away the crusts leaving a neat square. Slice the sandwich diagonally, twice. Arrange on a plate and serve.


Cutting the cucumber sandwiches into triangles or fingers is a personal choice, some have gone so far as to cut the sandwich into a perfect circle to match a single thick cut cucumber. Cucumber sandwiches will vary greatly from your local tea rooms, to country estates to the Ritz, so do what pleases you!
Use only soft white sliced bread for this recipe, as this will help you achieve a good square when you remove the crusts. If you wish to stick to tradition, this is no place for a sourdough or thick granary.

Easiest Cucumber Sandwiches (Perfect for Afternoon Tea and Picnics)

Many years ago, I shared a recipe for cucumber and cream cheese sandwich rolls made with lavash bread.

It was when I just stared blogging and didn’t have a clue what I was doing, so I shared something my kids loved. However, it wasn’t just my kids, it was all the children in my kids’ classrooms. There’s just something about a cucumber sandwich.

Of course, the cucumber sandwich is a quintessential part of a well appointed afternoon tea tray. I think I would be extremely disappointed, no, I know I’d be crestfallen if there was no cucumber sandwich on my tea tray. As with many the recipes I share, I often say that simplest is best, and this is the case again.

Just three components to this famous sandwich, however, the quality of ingredients and how it is made and assembled makes a world of difference. Here are my suggestions for the best cucumber sandwich:

Cucumber: try to use organic, as they will just taste better. Farmer’s market cucumbers or homegrown will give the best flavor. They must be firm and fresh.

Cream Cheese: by far, the very best cream cheese I’ve ever had is made by Arla. It seems difficult to find here in LA, but if you have it at your grocery store, buy it–you will absolutely love the quality and flavor!

Bread: find any thinly sliced, white bread that has the least amount of ingredients. You can make your own bread, but it’s often difficult to make a soft, yet firm loaf which is what’s needed for these sandwiches.

What Is a Cucumber Tea Sandwich?

These simple (as in, really, really simple) little sandwiches of crunchy, thinly sliced cucumbers inside slices of bread slathered in butter or cream cheese are as delicate as a spring breeze.

While they’re ideal to serve as part of a Mother’s Day brunch, a baby shower, or a graduation party, you can also make just a few of them and have your own private little tea party, or a fast and easy lunch.

The tradition of tea sandwiches started in the mid 1800’s when it became fashionable to serve something in the late afternoon to stave off hunger before the long wait for an eight o’clock dinner. And there you have it. Scones and strawberries and jam-filled tarts soon followed, but cucumber sandwiches still reign.

What type of cucumber do I use?

The cucumber you choose can make the difference between a soggy or firm sandwich. Try and find cucumbers that are seedless or have little seeds. The smaller the cucumber the better. I used Persian cucumbers which have a firm flesh and little seeds. English cucumbers work well too. If you use common salad cucumbers, scoop out the seeds in the middle first. This will get rid of extra moisture.

Be prepared to pass all scrutiny

Firstly, the bread must be extremely soft. White is more traditional, though wholegrain is absolutely fine. It’s the softness that’s important.

Secondly, the cream cheese and butter should be spread thickly. This a decadent sandwich, not one for the health-conscious.

Thirdly, the cucumber should be sliced thinly, and without skin. Just a little salt and pepper should be used, as it can quickly become overpowering. Dill or mint leaves are your friend – they pair well with cucumber and easily bring the sandwich up a level.

Optionally, you may remove the crusts from the cucumber sandwich. High-society usually did this, and would surely still approve – we don’t, however. What a waste of bread. And good food is not something that should be wasted. That being said, if you have a favourite dog/child/servant willing to eat said bread, knock yourselves out.

Anything else?

Finally, cucumber sandwiches should be presented as elegantly as possible. If you have a silver platter, this will do perfectly. Otherwise the ‘good china’ will do in a pinch. Although guests may eat from paper plates at impromptu picnics in the garden, a good cucumber sandwich must never be served on paper.

Now you’re armed with the knowledge to make the best cucumber sandwiches with cream cheese you’ve ever had. So, push forth and enjoy your endeavors and guest-pleasing adulation.

Make this easy cucumber sandwich recipe

1. Make the cream cheese filling and slice the cucumbers.

First, make the filling by beating 8 ounces of cream cheese (Neufchatel works great, too), ½ cup of mayonnaise, ¼ cup of sour cream, 2 teaspoons of dry Ranch mix, and 1/8 teaspoon of dried dill.

For best results, let the mixture sit in the fridge for a few hours or over night before using it. It’ll still be yummy if you can’t wait to use it, but letting it sit for a bit makes the flavor a bit smoother.

Next, cut 2 cucumbers into slices and set aside.

2. Assemble and cut the sandwiches.

Now take 2 pieces of bread and spread a layer of the cream cheese mixture on each piece.

Lay cucumber slices on one of the pieces, and then cover that piece with the other one.

And it’s a cucumber sandwich!

Keep going until you’ve used up all the cucumbers! Or if you don’t need to make these in bulk, just set your filling and sliced cumbers in airtight containers in the fridge so you can make a super easy cucumber sandwich whenever you want one.

Tip: Turn the heels of the bread inward so that all of the sandwiches match. No one will know which ones were made using the heels!

Spread the cream cheese mixture on the heel side, layer cucumbers, and close.

You can’t even tell it’s the heel anymore!

If you’re making these for a tea party or just like to feel extra fancy, use a sharp knife to trim off the crusts and cut each sandwich into fourths. You can cut them into rectangles, but I like to make triangles to better show off that fresh cucumber inside. You can make triangles by first cutting the sandwich in half and then cutting each half at an angle.

And that’s it! Aren’t these little cucumber sandwiches so cute! AND tasty!

  1. Make the Spread – Combine the cream cheese, mayonnaise, sour cream, spices, and herbs in a mixing bowl and use a handheld mixer to combine.
  2. Prep – Thinly slice the cucumbers and remove the crust from the bread. You’ll find a sharp, serrated knife best for removing the crust.
  3. Assemble – Lightly butter each slice of bread and be sure to spread it all the way to the edges. Then, add a scant tablespoon of the dill spread across each slice of buttered bread. Add the cucumbers, slightly overlapping them, to half of the bread slices, and top with the other half of the bread slices.
  4. Cut – Cut your Cucumber Tea Sandwiches into triangles or rectangles. If you’re making round tea sandwiches, see below!


There’s more than one way to slice a sandwich, and there are lots of ways to slice a tea sandwich. The first step is to remove the crust. It’s best to remove the crust before you add the filling.

  • Triangles | Cut the assembled sandwich in half on the diagonal. Then, cut each diagonal in half.
  • Squares | Cut the sandwich into quarters. This means you’ll cut each sandwich in half, then, cut each half in half crosswise!
  • Rectangles (a.k.a. Finger Sandwiches) | Cut each sandwich into three narrow strips.
  • Rounds (or Decorative Shapes) | Use a decorative cookie cutter or a biscuit cutter to cut out shapes from the sliced of bread. Note, you will probably need double the bread if using this method of cutting. Depending the size of your cookie cutter, there will likely be lots of wasted scraps.

When you are cutting Cucumber Sandwiches into shapes, make sure you’re using a good, sharp serrated knife. If you don’t have a good-quality bread knife, use your sharpest knife, and carefully wipe it clean between cuts so the edges of the tea sandwiches stay polished and neat looking!

This cucumber sandwiches recipe is an easy appetizer recipe to make and only uses four ingredients! These mini sandwiches will quickly become one of your favorite appetizers and the best thing to bring to any gathering.

My sister-in-law introduced me to this recipe years ago and I knew I had to share it with you because it’s THAT good! When I first ate these, to say I was obsessed was an under-statement. I had to walk away because it was easy to eat way too many of them. These fancy mini cucumber sandwiches recipe has become my go-to for a tea party appetizer recipe.

To make the cucumber sandwiches all you need is 4 ingredients:

  • Rye bread – this is usually sold by the deli counter, called ‘cocktail bread’ – or you could use any bread and cut it in small shapes
  • Cucumbers – I like to use seedless English cucumbers
  • Cream cheese – this works best at room temperature, feel free to use reduced fat cream cheese
  • A packet of ranch dressing mix – be sure to get the powdered packet of ranch dressing, as opposed to anything liquid.

There’s a fifth ingredient if you feel like getting fancy with a topping. You can always add a sprig of dill to take the sandwiches to the next level.

How do you make these cucumber sandwiches?

  1. Combine ranch seasoning packet and cream cheese.
  2. Spread layer on piece of bread.
  3. Slice cucumber and top bread/cream cheese mixture with the cucumber slice.
  4. Add a sprig of dill for garnish (optional)

So simple and SO delicious!

I love taking these cucumber sandwiches to parties. They are so easy to make in bulk and everyone loves them. These are the perfect sandwiches for something like a bridal shower or tea party inspired party – and then, don’t forget to add a mimosa bar to the party – everyone will love it.

This cucumber sandwiches recipe will quickly become one you make on repeat – I promise! Easy, delicious and under 5 ingredients.

Making low carb cucumber sandwiches takes just a few minutes! Cut them in half lengthwise, then cross-wise. Then, scoop out the seeds using a spoon, like this:

  1. So that we don’t end up with too much cucumber
  2. So that the cucumber subs don’t get watery really fast!

Next, spread mayonnaise in a thin layer inside all the cucumber halves. About a teaspoon each is a good amount:

Next, stack the fillings inside the cucumbers.

Tip: It helps to have things you can fold inside the deepest parts touching the cucumber. I used lettuce on the bottom and an extra piece of rolled up turkey on the opposite half, as shown below. This helps keep your cucumber sandwiches together!

And… voila! Now that you know how to make cucumber sandwiches without bread, the possibilities are endless.

Try mixing it up with these variations:

  • Swap turkey with salami, or any other lunch meat you like.
  • Add some avocado or guacamole to your cucumber subs.
  • Omit the cheese for a dairy-free version.
  • Make your own cucumber subs recipe with any sandwich fillings you like!

1 large cucumber, peeled, seeded, and grated
1 package (8 ounce size) cream cheese, softened
1 tablespoon mayonnaise
1 teaspoon dried chives
1/4 teaspoon dill weed
1/4 teaspoon seasoned salt
1 loaf (16 ounce size) sandwich bread

Is there anything more refreshing than a crisp, cool cucumber sandwich on a hot summer’s day? During the dog days of summer, my appetite dips. Hearty meals become unappetizing (as does slaving over the stove or turning on the oven).

Instead, I love fresh produce and juicy tomato sandwiches. Some of my favorite summer dishes include chilled spaghetti salad with Italian dressing, and creamy no-bake desserts like Oreo cake.

These are not your average cucumber tea sandwiches. Instead of thin bread and a smear of butter, crunchy cucumbers are piled on cream cheese topped pita bread! That doesn’t mean you couldn’t serve them for afternoon tea though!

A convenient packet of Italian dressing mix makes the perfect cream cheese spread. Alternatively, you can use your favorite flavored cream cheese. Another idea is to use dry ranch dressing!

Not only do these tasty sandwiches make a satisfying lunch, but they’re wonderful appetizers as well. These are the kind of cucumber sandwiches that even the manliest of men will eat and enjoy.

They’re cute enough for baby showers and ladies luncheons, but different from the tea sandwiches that grandma used to make.

They are an absolute snap to put together. If you’re going to make them ahead, I recommend toasting the pita bread so it doesn’t get soggy. For parties, I usually have my cream cheese pre-blended and the cucumbers sliced ahead of time. Assembly is a breeze after that.

These little sandwiches are perfect for showers and potlucks alike. I’ve served them as an appetizer at barbecues and birthday parties (the adults have to eat too). They also make a tasty summer snack.

Ingredients for Easy Cucumber Sandwiches:

  • 1 block (8 oz) cream cheese, room temperature
  • 1 tablespoon Italian dressing mix
  • 4 rounds of pita bread (you could substitute white bread or wheat bread if you prefer)
  • 1 large cucumber, very thinly sliced
  • Lemon-pepper (optional regular salt and pepper will work too)
  • Chile-lime seasoning (optional)

Hard to believe my family has been gobbling up these pita wedges for nearly 20 years now! Food fads come and go, but good food stands the test of time.

If you’d like to increase the zesty nature of these sandwiches, I recommend sprinkling them with a little lemon-pepper. The brightness it adds takes them over the top! Something you won’t get with black pepper. We also like it with a dash of Mexican spice mix made of chile peppers and lime. Mixing the two is fabulous!

One last note: packets of Italian dressing can be found near the bottled salad dressings. You’ll only need 1 tablespoon of the seasoning, so save the rest in an airtight bag. You can use as a seasoning in marinades and pasta salad.

Cucumber Sandwich Recipe

I prefer to make cucumber sandwiches with cream cheese, but you could use butter if you prefer.

  1. In a small bowl, Mix cream cheese and Italian dressing mix.
  2. Spread 2 tablespoons of the cream cheese mixture on each circle of pita.
  3. Top with sliced cucumbers. Sprinkle with lemon-pepper and/or chile-lime seasoning. Cut into wedges and serve.

I also make these mini cucumber sandwiches for just about every holiday get-together!
