Our 41 Best Zucchini Recipes for Using up All Your Darn Zucchini

Despite this lineup of bright, summery-looking zucchini recipes, the fruit (yes, fruit) has a sad, watery reputation. Well, actually, the watery bit is really a fact: zucchinis are 94% H2O. But the “sad” bit is straight up gossip. Just because zucchini is inexpensive and abundant and you probably have at least a few rolling around in the fridge at any time between June and September, shouldn’t imply it’s not a valuable or worthwhile ingredient. No matter which cook method you choose—grilled, roasted, zoodled, stewed into oblivion—these zucchini recipes all prove that sometimes the best things take time. (Also: thyme). And if you simply can’t be convinced, make a loaf of zucch bread and call it a day.

9 Delicious Summer Zucchini Recipes for all the summer squash, no need to be inventive, come check out these recipes!

By the end of the day Friday, my second week of being sick with Bronchitis, I had had enough. The lack of energy and feeling weak nonstop, and the never ending cough and congestion, cooking was the last thing on my mind.

But I am a food blogger, and I was determined to not disappoint my readers and knew that I had to do something. On Tuesday, I actually attempted to make it to work and lasted until lunch at which time I excused myself to my boss and went home. Once at home I made myself comfortable in my pyjamas and sat my butt down in my recliner in front of the TV. As usual I was watching the food network channel which always makes me hungry. So I knew I had to do something.

I cooked! I made a tuna noodle casserole, which I will post sometime next week and share with you the recipe. Needless to say that took everything out of me and even though it’s a very easy recipe to make, I was still sick. Have you ever tried to cook something when you’re sick? It’s not easy trying not to cough on the food and always making sure your hands are clean and wash your hands every time you blow your nose.

I am hoping that this Bronchitis is coming to an end especially since it’s been a few days since I finished my antibiotics and secondly I’m tired of being tired. And this brings me to now. Still tired and lacking energy, here I am in front of my laptop, blogging because it’s what I love to do.

But I decided to change things up a bit on you today. Today I’m sharing with you 9 delicious summer zucchini recipes that I have previously posted here on Jo Cooks. These recipes are easy to make and perfect for all the summer zucchini you buy and never know what to do with.

Frequently Asked Zucchini Questions

Depending on the recipe you are preparing, you may want to peel the zucchini first, then trim off the ends and hold the end of the zucchini over the blades of a grater being careful as the zucchini reaches the bottom so you don't hurt yourself. You can use either a box, plank or even food processor.

Yes! You can definitely grate or prep the zucchini ahead of time. Keep it in a sealed air-tight container or plastic bag. I like to also add a paper towel to the plastic bag or container to help with any excess moisture from the zucchini. Properly stored, grated zucchini will last in the refrigerator for up to 3 to 5 days.
