Fat Witch Brownies

Inside the famed Chelsea Market, is a little shop called Fat Witch Bakery. I first sampled their famous brownies a few years back during a visit to New York. Like so many before and after me, I was quite pleased.

Recently, the good folks behind Fat Witch published a cookbook that I was lucky enough to preview. On first glance, I found many recipes I want to try (hazelnut cream cheese brownies. yes, please!). Ultimately, I figured that I should start with what most think they do best &ndash brownies.

The recipe notes suggest the addition of 1/2 cup of nuts, chocolate chips, or peanut butter chips, but I opted for the straightforward approach. These brownies are a bit different than most I&rsquove made. They are light in both texture and flavor. Eating one is a gentle yet pure chocolate experience. These might be the brownie of choice for those that aren&rsquot fond of strong flavors.

Pasta Soup tips

  1. U se a hot cast iron skillet and don’t over-stir or over crumble the meat — you want it to get browned to develop layers of flavor. Transfer sausage to a paper towel-lined plate to drain off the grease.
  2. Dice all three veggies into small and even sizes so they’ll cook quickly and integrate into the soup nicely.
  3. I recommend getting a good brand of broth/stock and fire roasted tomatoes as these ingredients are contributing the main flavor. I typically use Swanson® broth/stock and Muir Glen® or San Marzano® fire-roasted tomatoes (not sponsored)
  4. Grab a low sodium or no salt added broth/stock so you can control the amount of salt in the soup.
  5. These photos show regular-sized farfalle pasta, but I also tested it with miniature farfallepasta, and it was even better! Either pasta works, but the mini farfalle is easier to eat. Plus, you get more pasta per bite!

QUICK TIP

What’s in a name? Americans often call farfalle bow tie pasta. The name farfalle actually comes from farfalla, which is Italian for butterfly…and you know what? That name makes perfect sense now!

To make the cake, Ms Head melts 225 grams of unsalted butter and 500 grams of dark chocolate in the microwave, then leaves the mixture to cool.

In a separate bowl, she vigorously whisks seven large eggs with 100 grams of granulated sugar until they have tripled in size.

Once the chocolate mixture has cooled, Ms Head adds it on top, a third at a time until the two batters have blended to one.

She covers the outside of an eight-inch cake tin in foil and places it inside a baking tray before pouring the mixture in.

She bakes the cake at 150 degrees Celsius - lower than the usual temperature - for 30 to 35 minutes, checking that the edges are firm to ensure it's ready.

Ms Head leaves the cake to cool in the tin and refrigerates it overnight before serving with a handful of raspberries and vanilla ice cream.

Four-ingredient chocolate cake

7 large eggs (room temperature)

1. Melt butter and chocolate in the microwave and leave to cool.

2. Add eggs and sugar to a separate bowl and whisk vigorously until the mixture triples in size.

3. Mix batters together, adding the chocolate into the egg mixture one third at a time.

4. Cover the outside of an eight-inch cake tin in foil and place it inside a large baking tray, half-filled with boiling water.

5. Pour the mixture into the cake tin and bake at 150 degrees Celsius for 30 to 35 minutes. It's ready when the edges are firm to touch.

6. Leave the cake to cool in the tin and refrigerate overnight before serving with raspberries and vanilla ice cream.

Ingredient Notes

Quick or Rapid-Rise Instant Yeast - Starting with quick/rapid-rise instant yeast means you can be enjoying these delicious buns in no time, as you can skip the typical first rising period. Simply mix the dough, let rest a short 10-minutes, then shape and let rise to doubled before baking. Quick/rapid-rise yeast also doesn't need proofing in water, so you can add it directly to the bowl with the flour.

If you only have active-dry or regular instant yeast, see the notes in the recipe card below for how to adapt this recipe for regular yeast.

Maraschino Cherries - This is the traditional topping for this style of Chelsea Buns. You only need a few. Also note that as this is an upside-down loaf, you will be adding the cherries to the bottom of the pan to start. Once baked and inverted, they will end up as the topping. If you don't have or want to use cherries, you can simply omit.

Pecans - Again, halved pecans are another common topping and again, they actually start out on the bottom of the pan, so they end up on top of the loaf. Be sure to put the pretty top of the pecan facing down, so they end up facing up :) If you want a nut-free loaf, simply omit.

Raisins - Raisins always seem to be a bit divisive. I love them and I love them and always include them in my buns. That said, they are easily omitted if you are not a fan.

You will also need - All-purpose flour, white sugar, salt, brown sugar, cinnamon and butter.
